Potatoes

Diabetics should first and foremost limit their intake of potatoes. According to WebMD, Potatoes are a starchy vegetable, so while they may be healthy for some individuals, those with diabetes should avoid them. This is because they contain a lot of fat and sugar in addition to a lot of starch. Additionally, the starch in potatoes may stimulate the body to create more glucose. Thus, cruciferous vegetables like broccoli and cauliflower should be eaten in place of potatoes.

Corn

As with beans, corn is another vegetable that diabetics should avoid. The starchy vegetable is delicious to most people, but those with diabetes should avoid it. This is because maize contains carbohydrates that, if digested, can be turned into glucose and raise blood sugar levels.
